Healthy Mediterranean Rice and Beans

A wholesome blend of brown rice and cannellini beans, infused with Mediterranean spices and fresh vegetables for a nutritious meal.

Ingredients

  • 1 cup Brown Rice
  • 2 cups Water
  • 2 tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Garlic cloves, minced
  • 1 Bell Pepper, chopped
  • 2 cups Fresh Spinach
  • 1 can Cannellini Beans, drained
  • 1 teaspoon Cumin
  • 2 tablespoons Lemon Juice
  • Fresh Herbs (Parsley, etc.), for garnish

Instructions

  1. Rinse the brown rice under cold water until the water runs clear. Drain the cannellini beans thoroughly. Chop the bell pepper, onion, and garlic cloves.
  2. In a medium saucepan, combine brown rice with water and a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for about 35-40 minutes, or until tender.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Toss in garlic and bell pepper; cook until slightly softened, about 5 minutes.
  4. Add cooked rice, cannellini beans, spinach, cumin, and lemon juice to the skillet. Mix well and heat through for another 5 to 7 minutes, stirring gently.
  5. Remove from heat and sprinkle with fresh herbs before serving. Adjust seasoning with salt and pepper to taste.

Notes

For added protein, toss in some diced grilled chicken or shrimp. Can serve alongside roasted vegetables or a side salad.
