A wholesome and flavorful dish featuring brown rice, cannellini beans, and a medley of Mediterranean spices, perfect for any occasion.

Ingredients

  • 1 cup Brown Rice
  • 2 cups Water
  • 1 can Cannellini Beans, drained
  • 2 tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Bell Pepper, chopped
  • 2 cups Spinach
  • 1 teaspoon Cumin
  • 1 tablespoon Lemon Juice
  • Fresh Herbs for garnish (like parsley)

Instructions

  1. Rinse the brown rice under cold water until the water runs clear. Drain the cannellini beans thoroughly. Chop the bell pepper, onion, and garlic cloves.
  2. In a medium saucepan, combine one cup of brown rice with two cups of water. Add a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for about 35-40 minutes, or until tender.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent. Toss in the garlic and bell pepper and cook until slightly softened, about 5 minutes.
  4. Add the cooked rice, cannellini beans, fresh spinach, cumin, and lemon juice to the skillet. Mix well, ensuring the spices coat everything evenly. Heat through for another 5 to 7 minutes, stirring gently.
  5. Remove from heat and sprinkle freshly chopped parsley or any selected fresh herbs over the dish before serving. Adjust seasoning with salt and pepper to taste.

Notes

For added protein, toss in some diced grilled chicken or shrimp towards the end. Experiment with different vegetables based on what’s in season.
