A warm and wholesome dish combining brown rice, cannellini beans, and Mediterranean spices for a nutritious and comforting meal.

Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 can cannellini beans, drained
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 cups fresh spinach
  • 1 teaspoon cumin
  • 2 tablespoons lemon juice
  • Fresh parsley, chopped, for garnish
  • Salt and pepper, to taste

Instructions

  1. Rinse the brown rice under cold water until the water runs clear. Drain the cannellini beans thoroughly. Chop the bell pepper, onion, and garlic cloves.
  2. In a medium saucepan, combine the brown rice with water and a pinch of salt. Bring to a boil, then reduce to a simmer, cover, and cook for about 35-40 minutes, or until tender.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Toss in the garlic and bell pepper, cooking until slightly softened, about 5 minutes.
  4. Add the cooked rice, cannellini beans, spinach, cumin, and lemon juice to the skillet. Mix well and heat through for another 5 to 7 minutes, stirring gently.
  5. Remove from heat and sprinkle freshly chopped parsley over the dish before serving. Adjust seasoning with salt and pepper to taste.

Notes

For added protein, consider tossing in some diced grilled chicken or shrimp towards the end. Pair with a side salad for a complete meal.
