Ingredients

  • 1 cup granulated sugar
  • 1/2 cup (1 stick) melted butter
  • 2 large eggs
  • Zest of 2 lemons
  • 1/2 cup freshly squeezed lemon juice
  • 1 cup all-purpose flour
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter and line the bottom with parchment paper.
  3. In a bowl, whisk together the sugar and melted butter until creamy.
  4. Add the eggs and lemon zest, mixing well.
  5. Squeeze in the lemon juice and stir to combine.
  6. In a separate bowl, sift together the flour and baking powder. Gradually add to the wet mixture and stir until just combined.
  7. Pour the batter into the prepared pan and bake for 25–30 minutes, or until golden brown and a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
