  • 2 sweet potatoes, peeled and cubed
  • 1 lb smoked sausage, sliced
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh thyme or rosemary, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into cubes.
  3. In a large skillet, heat olive oil over medium heat. Add the sweet potatoes and season with salt and pepper; sauté until they begin to soften (8-10 minutes).
  4. Add the sliced sausage to the skillet and cook until browned and slightly crispy (5-7 minutes).
  5. Add minced garlic, fresh herbs, and honey, stirring for 2 minutes until fragrant.
  6. Transfer the mixture to a baking dish and roast for 20 minutes.
