Honey Garlic Sausage Sweet Potatoes

A comforting dish combining the sweetness of honey and earthiness of sweet potatoes with hearty sausage, perfect for family gatherings.

Ingredients

  • 2 tablespoons olive oil
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound smoked sausage or chicken sausage, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh thyme or rosemary for seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into cubes.
  3. In a large skillet, heat olive oil over medium heat. Add sweet potatoes and season with salt and pepper. Sauté until softened, about 8-10 minutes.
  4. While they cook, chop garlic and slice the sausage. Push sweet potatoes to one side, add sausage, and cook until browned, about 5-7 minutes.
  5. Add minced garlic, fresh herbs, and honey. Stir and cook until fragrant, about 2 minutes.
  6. Transfer to a baking dish and roast for 20 minutes.

Notes
