  • 23 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • ½ cup crumbled feta cheese
  • 4 cups mixed greens (spinach, kale, arugula)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic (minced)
  • Salt and pepper (to taste)

Instructions

  1. Prepare the Marinade: In a bowl, mix together olive oil, lemon juice, minced garlic, salt, and pepper.
  2. Marinate the Chicken: Place the chicken breasts in a zip-top bag and pour the marinade over them. Seal the bag and let it marinate for at least 30 minutes.
  3. Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side until the internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before slicing.
  4. Assemble the Salad: In a large bowl, create a bed of mixed greens. Layer the sliced grilled chicken over the greens. Sprinkle with fresh blueberries and crumbled feta cheese.
  5. Dress the Salad: Drizzle olive oil and lemon juice over the salad before serving. Toss gently to combine.
