A comforting family favorite featuring juicy meatballs nestled in soft sub rolls, topped with melted cheese and marinara sauce.

Ingredients

  • 1 pound ground beef (or turkey/chicken)
  • 1 cup Italian seasoned breadcrumbs
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons parsley (fresh or dried)
  • 1 large egg
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 46 sub rolls
  • 12 cups shredded mozzarella or provolone cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine ground meat, breadcrumbs, Parmesan, garlic, parsley, egg, salt, and pepper. Mix until just combined.
  3. Shape into golf ball-sized meatballs and place on a lined baking sheet.
  4. Bake for 25-30 minutes until cooked through and golden brown.
  5. In a skillet, heat marinara sauce and add baked meatballs. Simmer for 5-10 minutes.
  6. Slice sub rolls lengthwise to create a pocket and spoon 2-3 meatballs with sauce into each roll.
  7. Sprinkle cheese over the meatballs and roast in the oven for an additional 5 minutes.
  8. Let cool slightly, serve hot with extra marinara for dipping.

Notes

For non-beef options, feel free to swap ground beef for turkey or chicken. You can also add sautéed veggies for extra nutrition.
