A refreshing salad combining crisp cucumbers, creamy avocados, and sweet mangos, perfect for summer gatherings.

Ingredients

  • 2 Cucumbers, diced
  • 2 Ripe Mangos, peeled and cubed
  • 2 Avocados, diced
  • Juice of 1 Lime
  • 2 tablespoons Olive Oil
  • Fresh Herbs (like cilantro or mint), chopped
  • Salt, to taste
  • Freshly ground Black Pepper, optional
  • Red Pepper Flakes, optional

Instructions

  1. Wash and dice the cucumber into bite-sized pieces.
  2. Peel and cube the ripe mango, removing any fiber.
  3. Cut the avocado in half, remove the pit, and dice the flesh carefully.
  4. Chop your chosen fresh herbs.
  5. In a large mixing bowl, combine the diced cucumber, mango, and avocado.
  6. Drizzle with olive oil and lime juice and stir gently.
  7. Add salt to taste and optional spices to enhance flavors.
  8. Taste and adjust lime juice or salt as necessary.
  9. Serve immediately or let it sit for 10-15 minutes to allow flavors to marry.

Notes

Use ripe but firm avocados to maintain texture. If making ahead, save avocado until serving to prevent browning.
