A refreshing salad that combines crunchy cucumbers and sweet pineapple, perfect for summer picnics and family gatherings.

Ingredients

  • 2 large Cucumbers, diced
  • 1 medium Fresh Pineapple, diced
  • 1 small Red Onion, diced
  • A handful of Fresh Mint or Cilantro, chopped
  • Juice of 1 Lime
  • Salt and Pepper, to taste

Instructions

  1. Dice the cucumbers, pineapple, and red onion into bite-sized pieces and place them in a large bowl.
  2. Finely chop your chosen herbs and add them to the bowl.
  3. Squeeze the lime juice over the mixture and sprinkle with salt and pepper. Toss gently to combine.
  4. Allow the salad to sit for about 10-15 minutes for flavors to meld.
  5. Serve chilled or at room temperature as a side dish or light meal.

Notes

For added sweetness, you can introduce a drizzle of honey or agave syrup. Try adding avocado for creaminess or jalapeño for a kick.
