A refreshing and visually stunning beverage made with butterfly pea flowers and fresh lemon juice, creating a magical color transformation.

  • 1/4 cup dried butterfly pea flowers
  • 4 cups boiling water
  • 1/2 cup fresh lemons, juiced
  • Honey or sweetener of choice (to taste)
  • Ice (for serving)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. In a heatproof pitcher, pour the boiling water over the dried flowers. Allow them to steep for about 10-15 minutes.
  2. Using a fine mesh strainer, strain the flowers, discarding them. You’ll be left with a beautiful blue tea!
  3. Slowly pour in the freshly squeezed lemon juice and watch as the color transitions from blue to a stunning violet!
  4. Stir in honey or your sweetener of choice, adjusting based on your preference.
  5. Fill glasses with ice and pour the butterfly pea lemonade over the ice. Optionally, add a sprig of fresh mint for extra flair.
  6. Garnish with lemon slices or a touch of sparkling water for fizz, and enjoy cold.

Notes

Be careful not to over-steep the flowers to avoid bitterness. Experiment with flavored syrups for added uniqueness.
